Appreciation post: My neighbor's garden zucchini changed my summer cooking
She gave me a giant one last July, and I realized I could shred it into everything from pasta sauce to pancakes to stretch meals. Anyone have other ways to use up a vegetable glut?

Zucchini bread is a total game changer, it freezes so well. I also grate it into meatloaf to keep things moist.

Totally stealing that meatloaf idea from @colep72. My last one turned out so dry it was basically a brick. I tried adding extra broth but that just made it soggy. Grated zucchini sounds way smarter for keeping it moist without making it wet. Honestly, my cooking fails are why I stick to baking most of the time. At least with zucchini bread I can hide my mistakes under some cream cheese frosting.

Okay the meatloaf trick is genius, @colep72. Never thought to use it that way. Does it change the flavor much or just add moisture? I've only ever baked with it. Gotta try that next time.
