Tossed the scale and my baked goods have never been better
I know many bakers say you must weigh everything for good results, but I gave up my scale last fall. It was always a hassle to set up and clean. Now I just use measuring cups like my mom taught me. My bread comes out fluffy, and my cakes are moist every time. Take my basic muffin mix, I spoon the flour into a cup and level it off, no problems. I see why people like scales, but for my daily baking, cups do the job fine. Since I changed my method, I look forward to baking again. It feels more like cooking and less like a chemistry lab.
