Used to dry my wings for 30 minutes with paper towels, now I toss them in baking powder for 5
I was so frustrated with soggy wings from my air fryer. For months I'd pat them dry with paper towels, wait half an hour, then cook them. They still came out with that rubbery skin. Then my buddy from Chicago told me to just toss them in a teaspoon of baking powder and salt for 5 minutes before cooking. Total game changer. Now they come out crispy like I deep fried them. Anyone else got a secret trick that makes a huge difference?

Did you control for the type of paper towel too? Like Bounty vs the cheap stuff that basically disintegrates when wet. I tried this once and got wildly different times between brands so your results could be all over the place if you just used whatever was in the break room.
