Watching a guy in Boise break down a whole hog with a boning knife changed my whole approach.
He used one tool for everything, no fancy gear, and it made me realize we overcomplicate the basics, so what's the one knife you'd keep if you could only have one?

Read an article once about people using butter knives in a pinch. It's a lot more common than you'd think.
