My sister told me to stop using tap water for my pour-over and I fought her on it for a week

She came over last Sunday and saw me filling my kettle straight from the sink. She said, 'Dylan, you're messing up good beans with that hard water.' I live in Austin and our water is full of minerals. I told her it was fine, that I couldn't taste a difference. But she bought me a gallon of distilled water and a little packet of minerals to mix in, the Third Wave Water kind. I tried it just to prove her wrong. Made the same Ethiopian beans both ways. The tap water brew tasted flat and kind of muddy next to the one with the special water. The fruity notes just popped in the good water. I felt like an idiot. Has anyone else made the switch and been this surprised? What water do you use now?

Can't go back" is a strong way to put it. I just use a cheap filter on my tap and my coffee tastes fine to me. Seems like an extra chore for a very small gain.

Felt that exact same punch to the pride last year. Argued with my buddy that water was water until he basically forced a side by side test on me. The difference with my light roast was embarrassing, like I'd been drinking a different coffee my whole life. Now I use a basic filter pitcher for my daily cups, but for the fancy weekend stuff I mix up a gallon with those little packets. It feels like a hassle but I can't go back.

Okay but "can't go back" feels a bit much? It's still just water for coffee.
