Update: My barista in Austin said 'the water is half the drink' when I asked about my sour pour-over.

I started using filtered water instead of tap and it fixed my whole brew. Has anyone else had a simple change make that big a difference?

Actually, water is the whole drink.

Guess I'm just a fancy water delivery system.
