My first attempt at fermented hot sauce turned into a weird science experiment
I threw a bunch of habaneros and garlic into a jar with a 3% brine about 6 weeks ago and just opened it today. The smell was like a mix of fruit and old gym socks, but the taste was actually pretty amazing once I blended it up with some vinegar. Has anyone else had a batch that smelled terrifying but ended up tasting great?

Wouldn't have expected gym sock smell to lead to something tasty at all.
