My buddy called me a heathen for using a blade grinder

I was over at his place last month making pour over and he just froze when he heard my grinder. He goes 'you're pulverizing those beans, not grinding them. You're destroying all the flavor.' Honestly I thought a grinder was a grinder. So I caved and bought a used Baratza Encore off Facebook marketplace for $60. First cup I made with it tasted like a completely different coffee. Has anyone else had a friend call them out on something basic and it totally changed your setup?

Destroying all the flavor" sounds dramatic but yeah, he wasn't wrong.

Barely singed" is the key part. That's a whole different thing from burning the crap out of something. @sageburns probably saw the same thing I did where the cook just left it on too long and all that natural sweetness got replaced with straight ash flavor.

People act like a little char on a steak or some burnt garlic ruins the whole dish. I've had stuff that was way overdone and still tasted fine, a bit of bitterness never killed anyone. Calling it "destroyed" just feels like overkill for something that's barely singed. Unless he literally turned it to ash, then yeah, that's a problem. But most of the time people exaggerate about food being ruined when it's just a little crispy.
