Because a 1/16 inch gap sounds more like the clamps weren't tight enough or the wood moved, not that pinning is suddenly required for every shelf. Plenty of people glue and clamp shelves with no pins and they hold fine for years. Sounds like you got a bad batch, not that your whole method is broken.
