Man that sounds brutal. I feel you on the humidity thing, it's the worst when sealant decides to act up. Honestly you're not wrong. I had a similar thing with a guy named Hank who taught me to hang cabinets and he swore by shims for everything even leveling out a wobbly floor. Nah, I'm team zip ties all the way. Yeah they're annoying to cut off but once they're on they don't budge. Velcro loses its grip after a few months especially if you're moving stuff around. I've had velcro strips just fall off in the heat under my desk. Plus zip ties look cleaner when you do it right. Spend the extra time once and forget about it.
