Choosing between a gas and induction cooktop for my new pop-up

Gas grills can get scary fast. My neighbor's had a flare-up that singed his eyebrows off. Makes you double-check everything before you light it.

Spent $400 on a fancy menu board and it was a total mistake

Actually read an article about this exact thing a while back. It was talking about how a lot of food trucks in really sunny places ditch the screens because of the glare problem. They said it ends up looking cheap if you can't even read it. Maybe the simple chalkboard just fits the vibe better, you know? Like it feels more real and less like a corporate chain. I mean, if it's slowing you down and looking bad, going back to basics sounds like the move.

Talked to a surveyor at a site in Phoenix and he changed how I see my base files

That surveyor's comment about pretty pictures reminds me of a house addition I saw go wrong. The owners built a sunroom that ended up a foot over the property line because the drawings weren't tied to the real lot. @ninasingh is right, it all falls apart when you hit the real world. Even for an interior job, you never know when someone will need to tie into something outside later. It's not overkill to check the data, it just saves a huge headache down the road.

Back when the shop in Tacoma first started pushing those UV-cure sealants, I thought it was just a gimmick.

Yeah, nothing like a decade of direct sunlight to prove a point. Guess we all need that one project that just won't quit to make us believers. Pretty sure my skepticism melted right off with the last heat wave. Now if only my weekend plans showed that kind of staying power.
